Bring out the natural sweetness of beets by baking them.
- Heat oven to 375°F.
- Start with fresh beets. You can peel them first or wait and peel them after they've baked (their skins will slip right off!).
- Put beets in a baking pan or a on a layer of aluminum foil and toss beets with a Tbsp. or two of olive oil, vegetable oil, or canola oil. Sprinkle beets with salt, if you like.
- Bake beets until they are tender all the way through when pierced with a skewer or thin knife. The baking time will vary greatly depending on the size of the beets and how old they are (fresher beets cook up quicker; older beets will take longer); start checking the beets at about 30 minutes.
