Give fresh steamed green beans a bright, hot kick in the pants with this minted jalapeno marinade.

Ingredients:
- 1 lb. green beans, ends trimmed
- 2 garlic cloves, chopped
- 1 jalapeno chile, seeded and chopped
- 2 Tbsp. lemon juice
- 1/3 cup fresh mint leaves
- 3 Tbsp. olive oil
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
Preparation:
- Prepare a large bowl of ice water. Set aside.
- Steam green beans. Immediately plunge green beans in ice water. Swish around until completely cool. Dry thoroughly. Put green beans in a shallow dish.
- In a blender, whirl garlic, jalapeno, and lemon juice. Add mint leaves, olive oil, salt, and pepper and whirl until smooth.
- Pour dressing over green beans and toss to coat. Let sit at least 30 minutes at room temperature before serving or up to overnight covered and chilled.
