- 4 medium zucchini or summer squash
- 1 Tbsp. lemon juice
- 2 Tbsp. extra-virgin olive oil
- 1/4 cup Parmesan shavings (peel cheese with a vegetable peeler)
- Using a sharp knife or kitchen mandoline, slice zucchini as thinly as possible. Put slices in a large bowl and toss thoroughly with lemon juice.
- Arrange zucchini slices on a serving platter. Drizzle with olive oil and sprinkle to Parmesan shavings. Serve immediately.
Makes 4 to 6 servings.
