skinless tomato pulp without peeling
- I picked up this awesome tip from a cookbook: when you need just the pulp of a fresh tomato, cut it in half, seed, and grate each half on a regular box cheese grater (largest side) down to the skin. The result is instant fresh tomato puree!

- I always overplant cherry tomatoes--to use a bunch, I roast them with olive oil and shallots until they're caramelized and bursting (about 10 minutes in a 400º oven). Good for pasta sauce or as a bruschetta topping or whatever, especially if you crisp up some prosciutto strips in the oven at the same time.

- Tomatoes Spanish style: Grate a fresh tomato on the wide toothed side of a cheese greater and add to vinaigrette. This is also a great thing to add to paella along with onions and garlic as your sofrito base before adding the rice. Finally, you can smear grated tomato onto toasted bread that you rubbed with a clove of garlic. Drizzle with olive oil and serve!
